The best thing to do is to keep your body fulled throughout the day. To do this eat or drink foods that are high in protein and carbohydrates. Then after your workout take in more protein and carbohydrates within 2 hours to refill your energy supply.

Eat 4-5 SMALL meals a day. you can still have a tasty meal if its small AND healthy. if your working out a lot, you have to keep fuel in your body. when you go into low to negative calories, your body won’t function right. try to eat something every 2-3 hours.

Exercising for a total of 1 hour should not result in lethargy. Use a routine. Exercise on alternate days. Try 20 minutes on the elliptical machine. Then jog on the treadmill for 10 minutes. 2 days later use the stationary bike for 20 minutes followed by jogging for 10 minutes.
For food, reduce those that are high in carbohydrate and sugar. These give temporary sugar rush which is not good for the body. Eat smaller portion broken up into 5 different meal times instead of having 3 main meals with large portion.

Diet, sleep and hydration are the key to weight loss and energy… then training.
I have been working out for years and I am constantly adjusting my diet and training. Whilst I mainly concentrate on resistance training, the other principles are similar. I also used to suffer from lethargy and would have to sneak off to the toilet at work for a sleep almost every afternoon. This was a result of overtraining.
I find that 7 small meals a day, with 2 grms protein per kilo of body weight, limiting simple carbs to the morning and post workout and only eating healthy fats has increased my metabolism and provides me with a much more sustainable source of energy (i.e. no sleeping in the work toilets!)
To be honest the topic you ask about is so huge, I actually began writing an answer but realised it would take hours. I do most of my research online at expert forums where you can ask questions to a very well versed community. The best of which I find is. The title is misleading… this site deals with every aspect of a healthy lifestyle you could imagine, especially cardio and nutrition.
I would spend a few days researching the basics (as well as causes of post training lethargy), save use full information somewhere and jot down a diet. If after a month of a new diet and training, you still feel lethargic, try something different.
I hope this helps, please feel free to message me if you have any more questions and I dont mind commenting on any sample diets/training regimes you come up with
